This is the variety that put Margaret River on the map. Deep purple
in colour when young, developing soft brick colours with age.
Distinctive cassis, regional eucalypt and dark berries on the
nose lead into a complex, deeply concentrated and well rounded
wine with firm ripe tannins on the palate. The finish is long
and satisfying. A full-bodied style that with ageing becomes very
elegant and a wine to reflect upon.
This is the most noble and aristocratic of all the red varieties
that we grow at Willespie. Indeed it should be matched with dishes
that are rewarding to prepare, Slow Food is what it is all about
here. Dig out that recipe that Mum used to cook on your birthday,
take the time to cook it as good as Mum does it, and open a bottle
of this cabernet to drink with it.
